Our ideal candidate will lead and drive the team to provide amazing cocktails and drinks and impeccable service. This candidate would have great attention to detail but also have strong delegation skills and able to oversee the entirety of the bar operations. The Bar Manager will oversee all front of house operations and together with the Kitchen Manager will lead the delivery of Room for Milly’s vision. The Bar Manager will be expected to perform separate management/administrative shifts and bartending shifts. This position will report to the General Manager who oversees all locations.
ESSENTIAL DUTIES:
The Space

Overall responsibility for the presentation of the space and maintenance of highest level of cleanliness and appearance.

Train employees to level of detail in the presentation of the space.
The Team
-
Set staffing goals and objectives and make employment and termination decisions in close collaboration with the General Manager.

Training Bartenders and New Hires.

Participate in leading new hire orientation, explaining the culture philosophy and oversee the training of new staff.

Provide Bartender/barback, training, and scheduling alongside General Manager and provide direction to employees regarding operational and procedural issues.

Develop staff by providing ongoing feedback, establishing performance expectations and by conducting performance reviews.

Continually strive to develop hourly staff in all areas of development and cultivate positive communication skills.

Be knowledgeable of restaurant policies regarding personnel and administer prompt, fair and consistent corrective action for any and all violations of company policies, rules and procedures.

Create effective schedules and quickly resolving conflicts to ensure that Room for Milly is well staffed during peak hours while avoiding excessive overtime hours for any staff members and meeting labor budget goals.
High Quality Service

Ensure that all guests receive warm and welcoming service, and that the team is exceeding expectations at all times.

Maintain high level of service and standards by educating the staff in service techniques, culture and developing a personalized customer service.

Maintain guest satisfaction by monitoring, evaluating, and auditing beverage and service offerings; initiate guest program improvements; cultivate relationships with preferred guests; maintain good community relations.

Diffuse tense situations between patrons or staff members to prevent possible issues and eject unruly persons, if needed.

Maintain operations by preparing policies and standard operating procedures; implementing production, productivity, quality, and guest-service standards; determining and implementing system improvements.

Coordinate and implement drink menu changes with the General Manager and bar team.

Investigate and resolve complaints concerning quality and service.
Menu Development & New Menu Launch

Organize new menu rollout dates as directed by General Manager and disseminate to bar team with development and rollout schedule.

Set wireframe and overall tone of the menu concept in collaboration with General Manager.

Lead all-staff tasting for new menu. Create auxiliary educational materials for service staff (e.g. information on new spirits, ingredients, etc.)

Follow up on menu knowledge and execution through testing.

Prepare for launch: prep sheets, cocktail descriptions, cheater map, reorg walk-in, reorg liquor room, bar cleaning.

Coordinate photo shoots for new cocktails with General Manager. To be completed 3 weeks prior to launch.
Goals Management

Strong understanding of store P&L and factors contributing to driving revenue and containing expenses.

Work with the General Manager to drive business by developing and implementing marketing and promotional events and evaluate event results.
-
Accomplish company goals by accepting ownership for accomplishing new and different requests; exploring opportunities to add value to job accomplishments.

Review monthly P&L categories and investigate variances to budget with General Manager.
-
As requested from time to time, contribute to public relations and press inquiries in a professional and timeline manner: verbal, written, radio, video or online interviews; photos; and/or recipe submissions.

Lead the organization of special events, i.e., NYE, buyouts, etc in collaboration with Maître D.
Administrative and Financial

Keep the liquor license current

Suppliers

Control purchases and inventory.

Negotiate prices and contracts.

Developing preferred supplier lists.
-
Review and evaluate usage reports, analyzing variances and taking corrective actions.

Take inventory and reorder supplies.

Maintain organization of liquor room and all bar-related storage spaces
-
Address any maintenance issues as soon as they arise & properly communicate those issues to direct supervisor (General Manager).

Financial
-
Oversee cash handling procedures to ensure compliance with company policies.

Collect and sign off on all invoices for approval by General Manager

Prepare all required paperwork, including forms, reports and schedules in an organized and timely manner.

SKILLSET:

Hospitality and operations expert in the luxury cocktail bar and beverage industry with excellent cocktail, wine and beer knowledge.

Expert in health and safety practices and five-star service standards.
-
Strong understanding of budgets, invoice and expense management.
-
Proficient with computer software programs including MS Word, Excel and adaptable to use of various apps such as Slack.

Have excellent time management.

Leadership traits include honesty, strong work ethic and an overall moral integrity with a hands-on management style.

Compensation:
